Marinated Mandarin Orange Chicken
- 4 Tablespoons Frozen Orange Juice Concentrate
- 3 Tablespoons Low Sodium Soy Sauce
- 1 teaspoon Olive Oil
- 1- 1/4 teaspoon Chili Garlic Sauce
- 3 cloves Garlic
- 11 ounces, weight Mandarin Oranges In Light Syrup
- 5 pieces Boneless Skinless Chicken Breast
- In a large resealable plastic bag, mix the juice, soy sauce, oil and chili garlic sauce.
- Mince the garlic and add to the bag.
- Shake to mix.
- Then pour the oranges with the liquid into the bag.
- Gently add the chicken and seal the zip bag.
- Let this marinate in the fridge for at least 6 hours.
- Preheat the oven to 375F.
- Put chicken in a GLASS baking dish sprayed with non stick cooking spray.
- Pour the marinade on top of the chicken.
- Cover with foil and bake for 25-30 minutes or until the chicken is no longer pink inside.
- Then uncover the chicken and broil for 5-7 minutes to brown the top of the chicken.
