Tortilla-Crusted Chicken with Salsa

  1. Place chicken-breast halves between two sheets of plastic wrap; pound with rolling pin to 1/4-inch thickness.
  2. Place flour in flat dish.
  3. Place egg white and 1 Tbsp.
  4. water in shallow bowl; beat lightly.
  5. Place crushed tortilla chips in another bowl.
  6. Dip each chicken breast first into flour, patting off excess, then into egg-water mixture.
  7. Finish by coating with tortilla-chip crumbs.
  8. In a large nonstick skillet, warm egetable oil over high heat.
  9. Add chicken and brown each side, turning after about 3 minutes.
  10. Reduce heat to medium-low; continue to cook chicken until firm, about 5 more minutes on each side.
  11. Spoon prepared salsa over chicken; serve.
