Tortilla-Crusted Chicken with Salsa
- 4 chicken-breast halves
- 1/4 c. flour
- 1/4 c. flour
- 1 large egg white
- 1 tbsp. water
- 1 c. tortilla chips
- 2 tsp. vegetable oil

- Place chicken-breast halves between two sheets of plastic wrap; pound with rolling pin to 1/4-inch thickness.
- Place flour in flat dish.
- Place egg white and 1 Tbsp.
- water in shallow bowl; beat lightly.
- Place crushed tortilla chips in another bowl.
- Dip each chicken breast first into flour, patting off excess, then into egg-water mixture.
- Finish by coating with tortilla-chip crumbs.
- In a large nonstick skillet, warm egetable oil over high heat.
- Add chicken and brown each side, turning after about 3 minutes.
- Reduce heat to medium-low; continue to cook chicken until firm, about 5 more minutes on each side.
- Spoon prepared salsa over chicken; serve.
