Basic Western North Carolina Barbecue Sauce Recipe
- 1 stk butter
- 1 lrg onion minced
- 6 x garlic cloves chopped
- 1 c. white wine vinegar
- 1 tsp cinnamon
- 2 whl cloves
- 1 Tbsp. dry mustard
- 1 tsp chili pwdr
- 1/2 c. brown sugar
- 2/3 c. ketchup
- 1 c. water Salt to taste Freshly-grnd black pepper to taste
- Heat butter in a saucepan; add in the minced onion, and chopped garlic, till they just begin to brown.
- Add in white wine vinegar, cinnamon, whole cloves, dry mustard, chili pwdr, brown sugar and ketchup.
- Stir, then add in water and blend.
- Bring to a boil, lower heat to simmer, add in salt and pepper to taste, and simmer for about 20 to 30 min.
