Holiday Carrots Surprise

• cooking spray
• 4 cups water
• 14 teaspoon salt
• 4 (10 ounce) packagesmatchstix carrots
• 1 teaspoon cinnamon
• 2 tablespoons light brown sugar
• 12 cup butter
• 2 (10 ounce) jarsall fruit peach fruit spread
• 1 teaspoon rum flavoring (optional)
• 2 eggs, beaten
• 14 cup heavy whipping cream
• 1 12 cups miniature marshmallows

1. Preheat oven to 400F Spray 2-quart round glass baking dish with cooking spray.
2. Bring water and salt to a boil.
3. Add carrots to boiling water and cook until very tender.
4. Remove from stove and drain very well.
5. (Remove all water).
6. In a large bowl, mash carrots until smooth.
7. Add to the mashed carrots the cinnamon, sugar and butter.
8. With mixer, beat until blended.
9. Add fruit, rum flavoring, eggs, and whipping cream.
10. Beat until mixture is smooth.
11. Pour into baking dish, bake 45 minutes or until set.
12. Remove from oven.
13. Top with miniature marshmallows and bake for a few minutes or until marshmallows start to melt and begin to brown.
