Chicken And Tomatoes
- 1 lb. chicken meat (uncooked)
- 2 1/2 Tbsp. soy sauce
- 1 Tbsp. sherry
- 2 Tbsp. cornstarch
- 1/2 c. oil
- 1 c. chopped onion
- 1/2 tsp. salt
- 1 tsp. sugar
- 1/2 c. soup stock or water
- 2 tomatoes, peeled and cubed
- Cut
- chicken
- in 1-inch pieces.
- Dredge it with mixture of 1 tablespoon soy sauce, sherry and 1 tablespoon cornstarch. Heat pan.
- Add
- oil.
- Saute
- dredged chicken until tender. Add onions and
- fry
- a
- few
- seconds.
- Drain
- chicken
- and
- onion. Preheat pan
- and add 2 tablespoons of the drained oil, remaining
- 1 tablespoon cornstarch, remaining 1 1/2 tablespoons soy sauce, salt, sugar and soup stock.
- Boil a few seconds. To the boiling sauce,
- add chicken, onions and tomatoes.
- Heat thoroughly and serve
- hot.
- May be made in advance to the point of adding the chicken, onions and tomatoes.
