Penne With Tomato Mascarpone Sauce Recipe

  1. Brown prosciutto in 1 Tbsp.
  2. oil.
  3. Remove from heat and stir in garlic.
  4. Add in tomatoes and simmer till most of the liquid is gone (about 20-30 min).
  5. Add in remaining extra virgin olive oil and peas and heat.
  6. Cook pasta.
  7. Just before serving, stir mascarpone cheese into tomatoes and mix thoroughly.
  8. Serves 4.
