Buttermilk Pecan Chicken Recipe
- 4 x skinless boneless chicken breast halves skinless chicken
- 1/2 c. butter
- 1 c. buttermilk (or possibly make your own)
- 1 x egg
- 1 c. grnd pecans
- 1 c. 100% stone grnd whole wheat flour
- 1/4 c. sesame seeds
- 1 Tbsp. paprika
- 1 tsp salt
- 1/4 c. minced pecans
- Preheat oven to 350 degrees.
- Lb.
- the chicken breasts to an even thickness.
- Heat butter in a baking dish large sufficient to accommodate the chicken breasts.
- Mix buttermilk and egg together in a small bowl.
- Mix grnd pecans, flour, sesame seeds, paprika and salt together on a large flat plate.
- Dip chicken in the buttermilk mix, then in pecan/flour mix, turning to coat.
- Place coated chicken breasts in the baking dish, turning to coat with butter.
- Top with minced pecans.
- Bake for 30 min, till the chicken is tender and the coating browned and crispy.
- NOTES : Moist and tender chicken breasts with a fragrant crunchy coating.
