Healthy Breakfast Cookies
- 34 cup brown sugar
- 1 cup Splenda granular
- 2 12 cups oatmeal
- 3 cups whole wheat flour
- 1 cup oat bran
- 1 tablespoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon salt
- 3 tablespoons cinnamon
- 12 teaspoon nutmeg
- 1 cup applesauce, any variety
- 6 egg whites
- 12 cup nonfat yogurt
- 12 cup raisins
- 12 cup prune, chopped
- Preheat oven to 350.
- Mix all ingredients together, I use my hands.
- You need a big bowl.
- Use parchment on a baking sheet for best results, or spray with oil.
- Drop by 1/4 cups, or ice cream scoop onto prepared baking sheets, about 2" apart and flatten into 1/2 inch tall circles with damp hands.
- Bake for between 8 and 11 minutes depending on how done you want them.
- I like them on the soft side, so I do 9 or 10 minutes.
- Cool.
