Teriyaki-style Quick-Braised Chicken and Shiitake Mushrooms with Vinegar

  1. Cut the chicken thigh meat into bite-sized pieces.
  2. Discard the stems of the shiitake mushrooms and cut in half.
  3. Heat the vegetable oil in a pan over a high heat and fry the chicken with the skin side down.
  4. After both sides are nicely browned add the shiitake mushrooms and fry.
  5. Add the sauce ingredients and shake the pan gently.
  6. Simmer over a medium heat for about 3 minutes and serve.
