Amaranth - a man's vege Recipe singpants

  1. One large handful of amaranth leaves or kale, stalks cut off (can leave them on), blanched for 2-5 mins.
  2. One handful of small amaranth leaves, leaves pulled off, and thrown in with big leaves for 2 mins.
  3. Drain.
  4. In a pan, gently soften and brown an onion sliced into half rings, two cloves of garlic, a couple of big knobs of ginger and 1-2 chillis.
  5. Remove onions, garlic and chilli, set aside.
  6. In same pan, quickly fry a medium sized steak cut into slices till tender.
  7. Add a little pepper.
  8. Remove steak strips, add to bowl of onion, garlic, ginger, and 2 whole chillis.
  9. Pour some soy sauce (tamari organic is bloody mint!)
  10. over the meat and misc.
  11. Cut 6-7 cherry tomatoes into halves, add a little olive oil, cook on high heat for 2 mins, add amaranth.
  12. Amaranth should be soft.
  13. Loosen (the amaranth), add salt and pepper.
  14. Add a little more olive oil if necessary.
  15. Add in two handfuls of spinach.
  16. Add back steak strips, onion, garlic and chilli.
  17. Mix well.
  18. Keep turning until spinach softens.
  19. Serve with a bit of feta cheese broken up on top, throw on some chopped up coriander, a wee squeeze of lemon juice, and Bobs your uncle.
  20. This step is optional, it tastes great without.
