Black Raspberry Buckle
- 1/2 cup butter
- 1 cup sugar
- 1 egg
- 1/2 tsp vanilla
- 1 1/3 cup flour
- 1 tsp baking powder
- 1/4 tsp salt
- 1/3 cup whole milk
- 2 cup black raspberries
- 1/4 nutmeg
- Preheat oven to 375F
- Mix half of the margarine and half of sugar.
- Then add in egg and vanilla.
- Combine 1 cup flour, baking powder and salt.
- Add mixes alternately with milk to creamed mixture.
- Starting and ending with dry ingredients.
- Pour into a greased 9 inches square baking dish with black raspberries.
- Combine remaining sugar, flour and nutmeg.
- Cut in remaining butter until the texture of cornmeal.
- Sprinkle over black raspberries.
- Bake 40-45 mins.
- Cool slightly before serving.
- Good served with vanilla ice cream.
