Healthy Apple Spice Cake

  1. Preheat oven to 350F.
  2. In a large mixing bowl, whisk the oil and maple syrup until well incorporated.
  3. Add the soy flour mixture and whisk for another 4 minutes until well incorporated.

  6. Stir in the oats and salt and set aside.
  7. This allows the oats to soften and absorb some moisture before baking.
  8. In a medium mixing bowl, sift together the flour, baking soda, baking powder, and spices.
  9. Gradually add the flour mixture to the applesauce mixture, beating well after each addition.
  10. Lightly coat a 10-inch Bundt pan with cooking spray or oil.
  11. Pour the batter into the pan.
  12. Bake for 45 to 55 minutes, until a knife inserted in the center comes out clean.
  13. Immediately invert the cake onto a serving plate and remove the pan.
