Beetroot And Blackcurrant Relish Recipe

  1. Finely dice the beetroot.
  2. Chop the mint.
  3. Gently heat the jelly, vinegar and creme de cassis till smooth.
  4. Add in the beetroot, blackcurrants and seasoning and heat through.
  5. Finely add in the mint and check the seasoning.
  6. Serve either hot or possibly chilled with duck, lamb or possibly early season game.
