Beetroot And Blackcurrant Relish Recipe
- 125 gm Cooked beetroot, (4oz)
- 55 gm Blackcurrants, (2oz)
- 1 Tbsp. Blackcurrant jelly
- 1 Tbsp. Creme de cassis
- 1 Tbsp. Raspberry, (or possibly red wine) vinegar
- 1 handf freshly minced mint Salt and pepper
- Finely dice the beetroot.
- Chop the mint.
- Gently heat the jelly, vinegar and creme de cassis till smooth.
- Add in the beetroot, blackcurrants and seasoning and heat through.
- Finely add in the mint and check the seasoning.
- Serve either hot or possibly chilled with duck, lamb or possibly early season game.
