Gourmet Potatoes
- 8 medium size potatoes, boiled in skins
- 1/4 c. oleo
- 1 1/2 c. grated cheese
- salt and pepper to taste
- 1/2 pt. sour cream
- 1 (10 1/2 oz.) can cream of chicken or mushroom soup
- 1/2 c. chopped green onions (also tender green parts)
- 1/2 c. crushed corn flakes
- 2 Tbsp. melted oleo
- In saucepan, put cheese, 1/4 cup oleo and soup; heat until cheese is melted, stirring frequently.
- Remove from heat and stir in sour cream.
- Peel and finely chop the potatoes.
- Mix with chopped onion and prepared sauce.
- Put in greased 9 x 13-inch pan. Mix together crushed corn flakes and 2 tablespoons melted oleo. Sprinkle over top of casserole.
- Bake at 350u0b0 for 45 minutes or until bubbly and slightly browned.
- Serves 8 to 10.
