Italian Chicken And Rice

  1. Chop raw chicken to small pieces
  2. Heat large saucepan on medium-high heat and add olive oil and then 1 clove garlic.
  3. Sautee 1-2 minutes.
  4. Add chicken and cook through.
  5. Remove chicken and set aside.
  6. Using remaining oil in pan, sautee the rest of the garlic and the onion until onions are almost clear.
  7. Add chicken broth as bring to a boil
  8. Add vegetables.
  9. Cover and simmer for 10-20 minutes depending on vegetables you're using.
  10. Add salt, pepper, oregano, and basil.
  11. Stir.
  12. (To give this recipe some punch, add a teaspoon or two of crushed red pepper now).
  13. Add a couple pinches d flour to reduce chicken broth if necessary and mix.
  14. Mixture should have about 1/4 cup to 1/2 cup liquid remaining.
  15. Add rice and mix everything together.
  16. Enjoy!
