Italian Chicken And Rice
- 2 tbsp Olive oil
- 2 clove Garlic
- 1 lb Chicken breast
- 1/2 Red onion
- 1 cup Chicken broth
- 2 cup Uncooked veggies of your choice
- 1 tsp Pepper
- 1 tsp Oregano
- 1/2 tsp Basil
- 1 tsp Salt (or more to taste)
- 4 Servings cooked rice
- 1 tsp Flour (only if necessary)
- Chop raw chicken to small pieces
- Heat large saucepan on medium-high heat and add olive oil and then 1 clove garlic.
- Sautee 1-2 minutes.
- Add chicken and cook through.
- Remove chicken and set aside.
- Using remaining oil in pan, sautee the rest of the garlic and the onion until onions are almost clear.
- Add chicken broth as bring to a boil
- Add vegetables.
- Cover and simmer for 10-20 minutes depending on vegetables you're using.
- Add salt, pepper, oregano, and basil.
- Stir.
- (To give this recipe some punch, add a teaspoon or two of crushed red pepper now).
- Add a couple pinches d flour to reduce chicken broth if necessary and mix.
- Mixture should have about 1/4 cup to 1/2 cup liquid remaining.
- Add rice and mix everything together.
- Enjoy!
