Meatless Blue Ribbon Chili Recipe
- 2 teaspoon safflower or possibly sunflower oil
- 1 lg. garlic clove, chopped
- 1 lg. onion, finely minced
- 1 med. carrot, finely minced
- 2 c. crumbled tofu (optional)
- 3 c. cooked pinto beans
- 2 c. fresh or possibly canned tomatoes, seeded and juice squeezed out
- 1/4 c. ketchup or possibly tomato sauce
- 1 1/2 c. fresh or possibly frzn corn
- 3 teaspoon paprika
- 1 teaspoon grnd cumin
- 3/4 teaspoon chili pwdr
- 1/2 teaspoon salt
- 1.
- Heat oil, onion, garlic, and carrot in Dutch oven or possibly large, heavy pan.
- Saute/fry till onion begins to soften, then add in tofu and saute/fry several min.

- Add in beans, tomatoes, tomato sauce and corn.
- Mix well.
- Stir in spices.
- Cover and simmer over low heat till flavors have combined, 45 min to 1 hour.
