Italian Skillet Frittata

  1. Heat oil in large nonstick skillet on medium-high heat.
  2. Add potatoes and chopped vegetables; cook 5 minutes or until potatoes are browned, stirring occasionally.
  3. Beat eggs, milk and salt with wire whisk until well blended.
  4. Pour evenly over potato mixture; cover.
  5. Reduce heat to medium-low.
  6. Cook 10 to 12 minutes or until center is set.
  7. Sprinkle with cheese; cover.
  8. Let stand 5 minutes.
  9. Cut into 6 wedges to serve.
