Blackened Mahi Mahi With Potato Apple And Corn Hash (Dj/E Recipe
- 3 lb Mahi mahi, in 1/2-lb. fillets
- 2 tsp Cayenne
- 2 tsp Cumin
- 4 Tbsp. Paprika
- 2 tsp Chili pwdr
- 1 tsp Cinnamon
- 1 tsp Black pepper
- 6 lrg Baking potatoes, diced
- 3 Tbsp. Extra virgin olive oil
- 2 Tbsp. Butter
- 1 tsp Minced garlic
- 2 x Granny Smith apples, diced
- 1 c. Corn
- 1 bn Chives
- 1 lb Haricots verts
- 3 x Roasted red peppers
- 1/4 c. Heavy cream
- Mix all dry spices together.
- Toss potatoes and 2 Tbsp.
- extra virgin olive oil together and saute/fry in medium heat in non-stick saute/fry pan.
- When 90 percent cooked, add in 1 Tbsp.
- of butter, garlic, and apples; saute/fry till potatoes are cooked, add in corn at end, along with minced chives.
- Reserve in hot place.
- Place fish in spice mix, coat one side and salt and pepper the other side of the fish.
- Saute/fry fish in large non-stick pan with 1 Tbsp.
- extra virgin olive oil for 3 min on each side.
- Saute/fry haricots verts with 1 Tbsp.
- butter.
- Distribute equally onto 6 plates: the haricots verts then the cooked potato hash on top, then place the fish atop the potato hash.
- In a food processor, process the red peppers and cream.
- Garnish with red pepper coulis.
- Yield: 6 servings
