Hearty Rice And Sausage Soup Recipe
- 1 pound turkey sausage or possibly bulk pork sausage
- 1 med. onion, minced (1/2 c.)
- 1/2 c. coarsely minced green pepper
- 1 clove garlic chopped
- 1 (16 ounce.) can Mexican style stewed tomatoes
- 2 c. water
- 1 (10 1/2 ounce.) can condensed beef broth
- 1/2 of a 6 ounce. can tomato paste (1/3 c.)
- 1/2 teaspoon chili pwdr
- 1/3 c. quick cooking rice
- 1 med. zucchini, halved lengthwise and sliced 1/2 inch thick
- 1 can white beans
- In large saucepan cook sausage, onion, green pepper and garlic till onion is tender and sausage is brown.
- Drain off fat.
- Cut up any large vegetables in stewed tomatoes add in to sausage mix with water, broth, paste, chili pwdr, rice, zucchini and beans.
- Cook for 1 hour on low heat.
