Broccoli Slaw and Melon
- 1/2 cantaloupe
- 1/2 small honeydew melon
- 1 package sliced light Jarlsberg cheese
- 1 red pepper
- 3 tbsp. olive oil
- 3 tbsp. red wine vinegar
- 1 tsp. prepared mustard
- 1 tsp. salt
- 1/2 tsp. caraway seeds
- 1/4 tsp. coarsely ground black pepper
- 1 package broccoli coleslaw or shredded cabbage mix for coleslaw
- Cut cantaloupe and honeydew into thin wedges; remove rind.
- Arrange melon wedges around edge of large platter.
- Cut Jarlsberg cheese into thin, bite-size strips.
- Thinly slice red pepper.
- In medium bowl, with wire whisk or fork, mix olive oil, vinegar, mustard, salt, caraway seeds, and black pepper.
- Add broccoli coleslaw, cheese strips, and red pepper; toss gently to coat with dressing.
- Spoon broccoli slaw in center of platter.
