Crispy Oatmeal Cookies
- 1/2 c. margarine, softened
- 1/2 c. sugar
- 1/2 c. firmly packed brown sugar
- 1/2 c. frozen egg substitute, thawed
- 1 tsp. vanilla extract
- 1 1/2 c. all-purpose flour
- 1 tsp. baking powder
- 1/4 tsp. salt
- 1 3/4 c. quick-cooking oats, uncooked
- 1 1/2 c. corn flakes cereal
- Vegetable cooking spray
- Cream margarine, gradually add sugars,
- beating at medium speed of an electric mixer until light and fluffy.
- Add egg substitute and vanilla; beat well.
- Combine flour and next 2 ingredients, stirring well.
- Add flour mixture to creamed mixture, mixing well.
- Stir in oats and cereal.
- Drop dough by level tablespoonfuls, 2 inches apart, onto cookie sheets coated with cooking spray.
