Tangy Orange Marmalade

  1. Wash fruit; remove peel in quarters, and cut rind into fine slivers.
  2. Add water and baking soda.
  3. Bring to a boil.
  4. cover and simmer 20 minutes, stirring occasionally.
  5. Dice pulp, discarding center membrane and seeds.
  6. Add pulp and juice to undrained rind.
  7. Cover.
  8. Simmer for 10 minutes.
  9. Measure 3 1/2 cups of the mixture into a large saucepan.
  10. Add sugar and mix well.
  11. Place over high heat; bring to a full rolling boil and boil hard 1 minute, stirring constantly.
  12. Remove from heat; stir in pectin immediately.
  13. Skim off foam with a metal spoon; alternate stirring and skimming for 7 minutes.
  14. Ladle into hot sterilized jars and seal with paraffin.
