Chicken & Dumplings

  1. Place chicken in pot, add water, broth, carrot, onion, Bring to a boil.
  2. Cover and lower heat.
  3. Simmer for 60 min or until chicken is done.
  4. Remove chicken and allow to cool.
  5. Remove onion & celery and discard.
  6. Reserve the broth.
  7. Make Dumplings: Combine the flour, baking soda and 1/2 tsp salt, cut in shortening utnil coarse.
  8. Add buttermilk stir, until moistened.
  9. Turn dough out onto a floured surface, knead 4 or 5 times.
  10. Roll dough to 1/4" thickness.
  11. cut into 3"x1": strips.
  12. Bring broth to a boil stir in milk.
  13. adjust salt & pepper.
  14. Drop dumplings one or two at ta time into boiling broth.
  15. Reduce heat to medium low.
  16. Stir occasionally to keep dumplings from sticking.
  17. Cook 8 to 10 minute Add boned chicken to the mixture and heat until it's hot.
