Classic Cheese Rarebit

  1. Place cheese, beer, butter and seasonings in saucepan; cook on low heat until cheese is completely melted, stirring occasionally.
  2. Beat egg lightly with fork in small bowl.
  3. Remove small amount of cheese sauce from saucepan.
  4. Add to egg; mix until well blended.
  5. Add to remaining cheese sauce in saucepan; stir until well blended.
  6. Cook until thickened, stirring frequently.
  7. Place 2 toast triangles on each serving plate.
  8. Top evenly with cheese sauce just before serving.
