Indian Cilantro Rice with Cashew Nuts and Raisins
- 1 1/2 tablespoons vegetable oil as needed
- 3/4 teaspoon cumin or as needed
- 4 cloves garlic or to taste, minced
- 1 large onions chopped
- 1 cup cilantro loosely packed, chopped
- 1 tablespoon mint leaves chopped
- 1 inch ginger finely chopped
- 2 each green chili peppers or as needed, freshly minced
- 13 cup raisins, seedless golden or brown
- 1 x salt to taste
- 1 cup rice long grain, white or brown
- 1/4 cup cashew nuts
- Heat oil in a large skillet.
- Add the cumin, and cook for about 2 minutes.
- Stir in garlic, ginger and onions, and cook for about 5 minutes until onions are soft and start brown.
- Stir in the cilantro, mint leaves, green chili peppers, raisins, and cook for 2 to 3 minutes.
- Add rice and cook for another 2 to 3 minutes until well mixed.
- Season with salt to taste.
- Put the rice and vegetable mixture into a rice-cooker until it's done.
- Before serving, top with some cashew nuts.
