Indian Cilantro Rice with Cashew Nuts and Raisins

  1. Heat oil in a large skillet.
  2. Add the cumin, and cook for about 2 minutes.
  3. Stir in garlic, ginger and onions, and cook for about 5 minutes until onions are soft and start brown.
  4. Stir in the cilantro, mint leaves, green chili peppers, raisins, and cook for 2 to 3 minutes.
  5. Add rice and cook for another 2 to 3 minutes until well mixed.
  6. Season with salt to taste.
  7. Put the rice and vegetable mixture into a rice-cooker until it's done.
  8. Before serving, top with some cashew nuts.
