Easy Chicken Gumbo

  1. Heat margarine in 3-quart saucepan until melted.
  2. Add okra, onion and green pepper; cook and stir until onion is tender.
  3. Stir in broth, tomatoes (with liquid), bay leaf, salt and pepper.
  4. (We like it spicy, so I add about 1 tablespoon Tony Chachere's Creole seasoning.

  6. Heat to boiling; reduce heat.
  7. Simmer uncovered 15 minutes.
  8. Stir in chicken and parsley; heat through.
  9. Serve chicken mixture over hot rice.
  10. Makes 6 servings.
