Biscottini Di Pratto/Cantucci Recipe
- 500 gm Plain flour
- 350 gm Caster sugar
- 2 x Oranges, zest of
- 2 Tbsp. Rosemary needles
- 4 x Large eggs
- 1 x 200 gram who almonds
- 50 gm Pistachios
- Beat the Large eggs with the sugar, add in all the other ingredients but the flour.
- Fold in the flour with a wooden spoon to a stiff paste.
- With floured hands make four sausages and put on two floured trays.
- Cook at 200C for 40 min, remove from the oven and slice thinly.
- Return to the oven, reduce the temperature and cook till crisp.
- Serve with vin santo.
