Grandma B's Porcupine Meatballs
- 1 lb. ground beef
- 1 can tomato soup
- 1 can water
- 1/2 cup onion, chopped
- 1/2 cup green pepper, chopped
- 1/2 cup instant white rice
- Salt and pepper to taste
- Mix ground beef, onion, green pepper, rice, salt and pepper.
- Shape into approximately 20 meatballs.
- Mix soup and water (mix in same bowl as meat mixture to incorporate crumbs into sauce); pour over meatballs.
- Bake covered at 350F for 1-1/2 hours.
