Carrot Spice Cake
- 1 1/2 c. grated carrots
- 1 1/2 c. sugar
- 1 1/3 c. water
- 1 c. raisins
- 1/4 c. shortening
- 1 tsp. cinnamon
- 1 tsp. cloves
- 1 tsp. nutmeg
- 2 c. flour
- 1 tsp. baking powder
- 1/2 tsp. soda
- 1/4 tsp. salt
- 1/2 c. chopped nuts
- Place carrots, sugar, water, raisins, butter and spices in a pan.
- Bring
- to
- atoil and simmer for 5 minutes.tool. Sift flour, baking
- powder,
- soda
- and salt together.
- Add the dry ingredients and
- nuts
- to
- the carrot mixture.
- Stir until blended.
- Pour
- into
- well-greased
- and
- flouredting
- mold (9-inch).
- Bake at 350u0b0
- for 50 minutes.
- To fill a Bundt pan, double the recipe.trost with Butter Cream Frosting.
