Turkey Quesadilla
- 3 cups PHILADELPHIA Neufchatel Cheese, softened
- 3 Tbsp. Cajun seasoning
- 3 qt. red onions, sliced
- 3 qt. green peppers, thinly sliced
- 3 Tbsp. Italian seasoning
- 3 cups chicken broth
- 48 each flour tortillas
- 96 slices hickory-smoked turkey breast, cut into 1 oz. slices
- 1 cup olive oil
- Mix cream cheese and Cajun seasoning until well blended.
- Saute onions and peppers in chicken broth with Italian seasoning.
- For each serving: Spread 1 tortilla with 1 Tbsp.
- of the Neufchatel mixture; top with 1/2 cup vegetable mixture and 2 turkey slices.
- Fold tortilla in half.
- Heat oil on griddle at 350F.
- Add quesadilla; cook until golden brown on both sides.
