Turkey Quesadilla

  1. Mix cream cheese and Cajun seasoning until well blended.
  2. Saute onions and peppers in chicken broth with Italian seasoning.
  3. For each serving: Spread 1 tortilla with 1 Tbsp.
  4. of the Neufchatel mixture; top with 1/2 cup vegetable mixture and 2 turkey slices.
  5. Fold tortilla in half.
  6. Heat oil on griddle at 350F.
  7. Add quesadilla; cook until golden brown on both sides.
