Glazed Vegetables
- 2 c. peeled and cubed turnips or rutabagas
- 2 c. carrots, cut into 1-inch pieces
- 2 c. peeled and cubed sweet potatoes or yams
- 2 c. peeled and cubed winter squash
- 2 c. celery, cut into 1-inch pieces
- 1 c. onions, slivered
- 3 Tbsp. cider vinegar
- 3 Tbsp. dark corn syrup
- 1 Tbsp. butter or margarine, melted
- 1/2 c. brown sugar
- 1/4 tsp. salt
- 3/4 tsp. ground ginger
- 1/2 tsp. cinnamon
- 3 Tbsp. vegetable water
- Combine ingredients in a bowl.
- Mix well.
- Pour over vegetables and mix well to coat.
- Bake in preheated 400u0b0 oven for 20 minutes. Baste occasionally (more vegetable water may be used, if necessary).
- Stir well and sprinkle with toasted, slivered or sliced almonds.
- Serves 8.
