Zucchini Relish

  1. Put zucchini, onions and peppers through meat grinder,using medium blade (I use my food processor).
  2. Sprinkle with 1/2 cup (125 ml) salt.
  3. Let stand over night.
  4. In the morning, drain and rinse well.
  5. Mix together remaining ingredients.
  6. Bring to boil in large kettle.
  7. Add ground vegetables.
  8. Simmer for 30 minutes.
  9. Ladle into hot jars,leave 1/2" head space.
  10. Seal, cool and store.
