Seafood Okra Gumbo

  1. In a large stock pot, over medium heat, add the oil.
  2. When the oil is hot, add the okra.
  3. Season the okra with salt and cayenne.
  4. Fry the okra, stirring constantly, for 10 to 12 minutes, or until most of the slime disappears.
  5. Add the onions, celery, peppers, and tomatoes.
  6. Season with salt and cayenne.
  7. Continue cooking, stirring often for 18 to 20 minutes, or until the okra and other vegetables are soft and the slime has completely disappeared.
  8. Stir in the garlic and bay leaves.
  9. Season the diced fish with Essence.
  10. Add the fish to vegetables and cook for 2 minutes.
  11. Add the fish stock.
  12. Bring the liquid up to a boil and reduce to a simmer.
  13. Simmer for 15 minutes.
  14. Season the shrimp and crawfish with Essence.
  15. Add the seasoned seafood and crabmeat to the pan.
  16. Add the file and continue to simmer for 5 minutes.
  17. Stir in the green onions and hot sauce.
  18. Remove the bay leaves and serve over the rice.
  19. Combine all ingredients thoroughly.
  20. Yield: 2/3 cup
