Lobster Stuffed Tenderloin Of Beef

  1. Cut tenderloin lengthwise to within 1/2 inch of bottom.
  2. Place frozen lobster tails in boiling salted water to cover; simmer 5 minutes.
  3. Remove lobster from shells; cut in half.
  4. Place lobster end to end inside beef.
  5. Combine melted margarine and lemon juice; drizzle on lobster.
  6. Close meat around and tie roast together with string.
  7. Place in roasting pan on rack.
  8. Roast at 425u0b0 for 30 minutes.
  9. Place bacon on top; roast 5 minutes longer.
  10. Saute onion in margarine in saucepan.
  11. Add wine and garlic salt and heat. Slice roast.
  12. Spoon on wine sauce.
  13. Serves 8.
