Irish Chocolate Coffee Cake
- 6-3/8 oz. semi-sweet bitter chocolate
- 1 tbsp. strong coffee
- 1 splash Irish whisky
- 4-1/3 oz. butter
- 4-1/3 oz. caster sugar
- 3 egg yolks
- 3 egg whites, whipped
- 2 oz. caster sugar
- 2 oz. self-rising flour, sifted
- 4-1/3 oz. chocolate
- 4-1/3 oz. butter
- 1 splash Irish whisky
- Melt bitter chocolate.
- Combine with the strong coffee and whisky.
- Cool and put to one side.
- Cream together the butter and sugar.
- Add egg yolks and mix well.
- Combine the chocolate and egg yolk mixtures.
- Combine the sifted flour and sugar.
- Fold in the flour/sugar and whipped egg whites alternately.
- Pour into a 23cm greased cake tin.
- Bake at 180 degrees C/350ݔF for 25 - 30 minutes.
- Topping: Melt chocolate and butter.
- Add whisky.
- Spread over top and sides of cooled cake.
- Enjoy.
