Orange-Glazed Carrots with Bacon

  1. Cut tops off carrots.
  2. Coarsely chop enough tops to measure 2 Tbsp.
  3. ; reserve for later use.
  4. Peel carrots; cook in boiling water in Dutch oven 5 to 10 min.
  5. or until crisp-tender.
  6. Drain carrots, reserving 1/2 cup cooking water.
  7. Cook bacon in large skillet on medium heat until crisp.
  8. Remove bacon from skillet; drain on paper towels.
  9. Discard all but 2 Tbsp.
  10. drippings.
  11. Wipe skillet with paper towel.
  12. Bring reserved cooking water and orange juice just to boil in same skillet.
  13. Add dry gelatin mix; stir 2 min.
  14. until completely dissolved.
  15. Add reserved bacon drippings and carrots; cook 2 to 3 min.
  16. or until carrots are glazed and tender, stirring frequently.
  17. Stir in orange zest.
  18. Transfer carrots and sauce to platter.
  19. Crumble bacon; sprinkle over carrots.
  20. Sprinkle with chopped carrot tops.
