Shrimp And Pepper Kabobs
- 1 lb. unpeeled large fresh shrimp
- 1 c. lemon juice
- 3/4 c. vegetable oil
- 1/2 c. soy sauce
- 1/4 c. plus 2 Tbsp. chopped fresh parsley
- 1/3 c. finely chopped onion
- 1 tsp. salt
- 1 tsp. pepper
- 2 cloves garlic, minced
- 2 medium size green peppers, seeded and cut into pieces
- 2 medium size sweet red peppers, seeded and cut into pieces
- hot cooked rice
- Peel shrimp, leaving tails intact.
- Arrange in a large shallow dish. Combine lemon juice, oil, soy sauce, parsley, onion, salt, pepper and garlic in a medium bowl. Stir well.
- Pour half of the mixture over the shrimp.
- Cover and marinate in refrigerator 4 hours. Drain shrimp, discarding marinade.
- Thread shrimp onto 4 (12-inch) skewers alternately with pepper pieces. Grill over medium coals 3 minutes on each side or until shrimp turns pink, basting with remaining marinade. Serve over hot cooked rice.
