Pride Of Iowa Cookies

  1. Cream the shortening and sugars until fluffy; beat in the eggs. Sift the flour with baking soda, baking powder and salt; stir into creamed mixture.
  2. Blend in vanilla.
  3. Mix coconut, nuts and rolled oats until uniformly blended.
  4. Roll into 1 1/4-inch balls and space 2 inches apart on lightly greased baking sheets.
  5. Using fingers, flatten balls into patties about 1/8-inch thick, evening up the ragged edges.
