Herb Frittata

  1. Preheat convection oven to 300F.
  2. SAUTE peppers and onions in butter until tender; set aside.
  3. Heat cream cheese slightly until softened.
  4. Whisk together cream cheese and milk until well blended.
  5. Stir in eggs, potatoes, seasonings and cheese; pour into 3 greased, 12 x 12-inch steam table insert pans.
  6. SPRINKLE peppers and onion on top and bake 35-40 minutes or until set.
