Herb Frittata
- 3 cups green and red peppers, finely chopped Target 1 pkg For $2.99 thru 02/06
- 1/2 cup Cooking onions, finely chopped
- 1/2 cup butter
- 5 cups Philadelphia Cream Cheese Product, Herb & Garlic
- 1 1/3 cups 2% milk
- 9 cups eggs, beaten
- 6 cups ORE-IDA Diced Hash Brown Potatoes, thawed
- 1/2 tsp. salt and pepper
- 1 1/2 cups Kraft Shredded Cheddar/Monterey Jack Blend Cheese
- Preheat convection oven to 300F.
- SAUTE peppers and onions in butter until tender; set aside.
- Heat cream cheese slightly until softened.
- Whisk together cream cheese and milk until well blended.
- Stir in eggs, potatoes, seasonings and cheese; pour into 3 greased, 12 x 12-inch steam table insert pans.
- SPRINKLE peppers and onion on top and bake 35-40 minutes or until set.
