Applesauce-Raisin Bread
- 1 egg, slightly beaten
- 1 c. applesauce
- 1/4 c. melted butter
- 1/2 c. granulated sugar
- 1/4 c. brown sugar, firmly packed
- 2 c. unsifted regular all-purpose flour
- 2 tsp. baking powder
- 3/4 tsp. salt
- 1/2 tsp. baking soda
- 1/2 tsp. cinnamon
- 1 tsp. nutmeg
- 1/2 c. seedless raisins
- 1 c. coarsely chopped pecans or walnuts
- In a bowl, combine egg, applesauce, melted butter, granulated sugar and brown sugar, blending well.
- Stir in flour, baking powder, salt, baking soda, cinnamon and nutmeg.
- Stir well until smooth.
- Stir in raisins and chopped nuts.
- Turn batter into a well-greased 5 x 9-inch loaf pan or fluted mold with tube, that holds about 1 quart.
- Bake in a moderate 350u0b0 oven for 45 minutes. Cool and frost with light powdered sugar, if desired.
- Makes 1 large loaf.
- (Bread slices better the second day.)
