Tuna Hummus Melts
- 15 ounces, weight Tuna In Water, Drained
- 1/4 cups Finely Chopped Red Pepper
- 1 whole Shallot, Chopped
- 1/4 cups Chopped Parsley
- 2 Tablespoons Drained Capers
- 3/4 cups Hummus
- 2 Tablespoons Dijon Mustard
- 1/2 Lemon, Juiced
- Salt And Pepper, to taste
- 8 slices Rye Bread
- 16 slices Tomato
- 8 pieces Dill Havarti Cheese
- Preheat the broiler.
- Place the drained tuna in a bowl and break up with a fork.
- Add the red pepper, shallot, parsley, capers, hummus, mustard, and juice.
- Stir to combine.
- Taste for seasoning and add salt and pepper to taste.
- Spread a thick layer of the tuna on the rye bread, top with tomato slices and cheese.
- Place on a foil-lined tray under the broiler.
- Heat until the cheese is melted and the bread is toasted.
