Tuna Hummus Melts

  1. Preheat the broiler.
  2. Place the drained tuna in a bowl and break up with a fork.
  3. Add the red pepper, shallot, parsley, capers, hummus, mustard, and juice.
  4. Stir to combine.
  5. Taste for seasoning and add salt and pepper to taste.
  6. Spread a thick layer of the tuna on the rye bread, top with tomato slices and cheese.
  7. Place on a foil-lined tray under the broiler.
  8. Heat until the cheese is melted and the bread is toasted.
