Snowball Cake
- 2 enveloped unflavored gelatin
- 4 Tbsp. cold water
- 1 c. boiling water
- 1 c. sugar
- 1 tsp. salt
- juice of 1 lemon
- 1 (No. 2) can crushed pineapple (undrained)
- 4 pkg. dessert topping mix, prepared
- 1 large or 2 small angel food cakes
- 1 pkg. Angel Flake coconut
- Soften gelatin in cold water; add boiling water, sugar, salt, lemon juice and pineapple.
- Stir until gelatin is dissolved.
- Cool completely.
- Prepare 1/2 of the dessert topping and fold into first mixture.
- Chill until syrupy.
- Break cake into small pieces. Line a large mixing bowl with waxed paper.
- Alternate layers of cake pieces and gelatin mixture.
- Mash down with large spoon as this is added.
- Chill overnight.
- Turn upside down on serving plate and remove waxed paper.
- Ice with other 2 packages of topping.
- Sprinkle coconut over top and sides.
