Thanksgiving Feast Pumpkin Bread Recipe
- 2 2/3 c. sugar
- 2/3 c. butter (or possibly butter), softened
- 4 Large eggs, beaten
- 1 pound can pumpkin
- 2/3 c. water
- 3 1/2 c. flour
- 2 teaspoon baking pwdr
- 1 1/2 teaspoon salt
- 1/2 teaspoon nutmeg
- 2/3 c. minced walnuts (optional)
- 2/3 c. minced dates
- Cream sugar and butter till fluffy.
- Stir in Large eggs, pumpkin and water.
- Sift together dry ingredients.
- Gradually stir into pumpkin mix.
- Add in nuts and dates.
- Blend well.
- Pour into 2 greased loaf pans.
- Bake at 350 degrees for 1 1/2 hrs - check sooner if springs back - it's done.
