Scotch Eggs
- 1 lb pork sausage, ground
- 12 tablespoon basil
- 14 tablespoon thyme
- 14 tablespoon marjoram
- 12 teaspoon salt
- 14 teaspoon pepper
- 8 eggs, soft boiled
- 1 cup breadcrumbs
- 1 egg, beaten
- mix sausage with herbs and spices.
- divide into 8 equal portions.
- soft boil the eggs, (about 6 minutes), cool and peel.
- pat meat portions into flat rounds, Place an egg into the center of each and fold the meat around the egg, covering completely.
- brush each with the beaten eggs and roll in the breadcrumbs.
- heat oil to about 350 degrees F.
- fry each egg until meat is medium to dark brown.
