Salad Chinois

  1. In a large bowl, toss chicken, coleslaw mix, and drained chow mein vegetables until well mixed.
  2. Toss chicken mixture with enough dressing to coat well.
  3. Line individual bowls or plates with a small amount of green salad.
  4. Spoon chicken mixture on top of green salad.
  5. Garnish with noodles and orange segments before serving.
  6. 2/3 cup mayonnaise
  7. 2 tablespoons reduced-sodium soy sauce
  8. 1 teaspoon ground ginger
  9. In a small bowl, whisk mayonnaise, soy sauce, and ginger until blended.
  10. Set aside, or refrigerate, if not using soon.
  11. Whisk again after refrigerating.
