7 Hour Wheat And White Bread
- 1 qt. water at 100~
- 6 Tbsp. sugar
- 1/3 c. molasses
- 2 pkg. dry yeast
- 4 to 6 c. whole wheat flour
- 2 c. milk, scalded
- 4 tsp. salt
- 8 tsp. oil
- 12 to 14 c. unbleached white flour
- Combine water, sugar and molasses.
- Dissolve yeast in 1/2 cup of this mixture and set aside.
- Mix wheat flour into remaining mixture.
- Add yeast mixture and let stand 1 hour.
- Scald milk, salt and oil.
- Let cool to room temperature and add to wheat mixture. Stir in 12 cups white flour.
- Knead into this as much additional white flour as necessary to keep dough from sticking to hands.
- Let rise for 2 to 2 1/2 hours.
- Punch down and cut into 5 loaves.
- Let rise in well-greased loaf pans until doubled in size, about 1 1/2 to 2 hours.
- Bake at 350u0b0 for 45 minutes.
