Green Tomato Pickles
- 1 peck sliced green tomatoes
- 8 large onions, peeled
- 1 green pepper, cut up
- 1 red sweet pepper, cut up
- 1 quart vinegar
- 2 c. white sugar
- 2 c. brown sugar
- 3 Tbsp. whole cloves
- 2 5-inch sticks of cinnamon
- 1 Tbsp. mustard seed
- 3 Tbsp. whole allspice
- pickling salt
- Combine green tomatoes, onions, green pepper red pepper and sprinkle lightly with pickling salt.
- Let stand 3 hours.
- Drain and rinse.
- Add: vinegar, sugar and
- brown sugar.
- Place in cheese cloth bag and add to above the following: cloves, cinnamon sticks, mustard seed and
- allspice. Bring vegetable and syrup slowly to boil.
- Reduce heat and cook slowly about 1 hour.
- Seal in sterilized jars.
