Turkey Quesadillas
- 6 flour tortillas (7-inches in diameter)
- 2 tsp. olive oil
- 1 medium onion, finely chopped
- 1 sweet red pepper, cored, seeded and diced
- 1 1/4 lb. ground turkey
- 1/4 tsp. salt
- 2 cloves garlic, minced
- 1 tsp. each: ground cumin, chili powder and dried oregano
- 1 jalapeno, seeded and chopped (optional)
- 1/2 c. low-salt tomato sauce
- 2 Tbsp. minced cilantro or mix parsley and cilantro
- 1/2 c. grated Monterey Jack cheese
- 1 c. salsa (optional)
- Preheat oven to 350u0b0.
- Wrap tortillas in foil and heat in oven for 8 minutes.
- Meanwhile, in a 12-inch skillet, heat oil over moderate heat.
- Add onion and red pepper; saute, stirring occasionally, until onion is soft.
- Add the turkey and salt to the skillet; saute, stirring, until the turkey is no longer pink.
- Add the garlic, cumin, chili powder, oregano and optional jalapeno pepper.
- Saute, stirring, for 1 minute or until mixture is dry. Stir in the tomato sauce and cilantro.
