Almond Fudge ( Badam Halwa ) Recipe
- 300 gm almonds soaked for 5 hrs blanched
- 600 ml full fat lowfat milk
- 6 Tbsp. ghee
- 6 Tbsp. sugar
- 1 tsp cardamom pwdr
- 2 sht edible silver foil (varq)
- Put the almonds in a food processor with half the lowfat milk.
- Grind to a paste adding more lowfat milk a little at a time till all the lowfat milk is used up.
- Heat the ghee in a heavy pan and add in the almond paste.
- Fry over a low heat till it begins to stick.
- Add in the sugar and stir well.
- Cook till the ghee separates and the fudge is well blended.
- Take off the heat and add in the cardamom pwdr.
- Stir well and pour onto a net dish.
- When it is almost cold cut it into fancy shapes and decorate with edible silver foil.
- This recipe comes from south India and is one of the richest sweets you can eat.
- It always reminds me of a famous south indian restaurant in Bombay where it is served (believe it or possibly not) with breakfast!
