smoky green bean casserole
- 1 1/2 lb green beans, cut into 1" pieces
- 3 slice bacon, chopped
- 1/2 cup chopped onions
- 2 tbsp flour
- 1 1/2 cup milk
- 2 cup cheddar cheese
- 1/3 cup cracker crumbs
- blanch beans 4-6 min.
- cook bacon until crisp, remove from skillet.
- cook onion in 2 T. drippings until tender, add flour.
- stir in milk & cook 3 min.
- until thickened.
- add cheese & stir until melted.
- stir in beans & bacon & transfer to 1 & 1/2 qt.
- casserole.
- top with cracker crumbs & bake at 350 for 25 min.
